You can't underestimate the importance of cooking in human development.

Cooking helps to break down large amounts of both meat and vegetables and make them digestible. It literally turns things that aren't really "food" into food.

Soup in particular allowed humans to capture a huge amount of nutrition from bones and other parts of animals and vegetables that was otherwise hard to get at and digest.

Of course, cooking and boiling also kills bacteria. You can also boil off inedible / poisonous chemicals from roots to leave them edible.
